this probably sounds so stupid, but hey ho...

where do you top up the 2003 sedona? Ive just bought one a couple of weeks ago, and just topped up the coolant with the expansion bottle.

only after doing this did I notice there is a pressure cap on the top left of the engine, should I have filled up here? or is there a specific way of doing it??

I only get paranoid, because a previous vehicle (daihatsu hi-jet) also had 2 "top up" points, and if done wrong would lead to air locks and engine overheat.

When the car is stone cold remove the pressure cap and top up the coolant level replace the cap and top up the expansion bottle check the expansion bottle weekly and do the pressure cap check once a month ONLY EVER REMOVE THE PRESSURE CAP WHEN THE CAR IS STONE COLD

warning heeded, I have come across this type of pressure cap before (Landys, 4x4s, vans etc) so am aware of the danger of the things!!, but thanks for the warning, future searchers may not be so careful or aware of the danger.
